Ohishi Whetstones cut quickly but are dense and hard enough to only require a light spray of water before use. They are long-lasting and if flattened regularly after use will give you years of use. The Ohishi range of whetstones is produced in Kyoto Japan.

Japanese Whetstones / Sharpening Stones
If you are looking to sharpen Japanese kitchen knives, Japanese plane blades, or Japanese woodworking chisels it is recommended that you use a Japanese whetstone. Using a grinding wheel can have an extremely negative impact on the temper of the metal due to the heat created and oil stones tend to be courser and cut slower.
Japanese whetstones, no matter the type/hardness of the stone and your sharpening style, will tend to wear over time. It is highly recommended that you use a flattening stone at the end of every use to improve the longevity of the stone.
