The Verdun Series Bread knife by Shimomura is an all-stainless-steel Japanese kitchen knife. With the handle integral to the blade, it is incredibly easy to maintain and the MoV Stainless-steel blade holds its edge for a very long time.

The unique design with the handle angled slightly above the blade makes slicing bread, roasts, and cold meats a very easy job. 

I have tested the knife on both soft and hard crust bread, roast pork, and BBQ Chicken and in all cases, it does a perfect job.

Verdun Series of All-Stainless-Steel Japanese Kitchen Knives by Shimomura.
Shimomura Kogyo is located in Sanjo, Niigata, Japan, and has been manufacturing high-quality kitchen knives since 1874.
The Verdun Series is made of Mov Stainless Steel which has a higher level of carbon giving a harder finish and longer-lasting edge. The blades of this range of Japanese kitchen knives have been wet ground through the complete sharpening process and this gives you a knife that is seriously sharp and ready to go out of the box.

Washing – Hand wash with soapy water, rinse the blade with Hot water. Dry your knives as soon as possible after washing and do not leave them wet for extended periods of time. Do not wash in a dishwasher!

Storage – Store in a cool, dry place. Do not store in cutlery draw with other knives. Use a knife rack or at a minimum a cover for the knife to protect the edge

Sharpening - It is recommended to sharpen these knives to a fine edge on a Japanese Whetstone. However, for touch-up sharpening, you can use a Ceramic Steel and a 2 or 3 Wheel Japanese Water sharpener as these are designed for the angle of bevel angle of Japanese knives.
