Japanese Whetstones / Sharpening Stones

If you are looking to sharpen Japanese kitchen knives, Japanese plane blades, or Japanese woodworking chisels it is recommended that you use a Japanese whetstone. Using a grinding wheel can have an extremely negative impact on the temper of the metal due to the heat created and oil stones tend to be courser and cut slower.
